  1. Pizza Dough (If you want to make it from scratch- more power to you!  However, we typically do this quick and easy with the pre-made whole wheat dough available at the Whole Foods pizza counter)
  2. 1 can of quartered artichokes
  3. 1 cup of shredded asiago cheese
  4. 1 large yellow onion
  5. 2 Tsp olive oil
  6. Dried rosemary for seasoning

Quick, easy, and inexpensive!  This pizza is a favorite among our vegetarian girlfriends, yet tasty enough to appeal to meat loving boyfriends.

  • Preheat oven to 425 degrees
  • stretch pizza dough into desired shape  and place on baking sheet or pizza stone
  • In a frying pan, caramelize sliced onion in olive oil until softened and clear
  • Coarsely chop quartered artichokes
  • Pour caramelized onions (and any remaining olive oil over spread pizza dough)
  • Mix chopped artichokes in with the onion topping
  • Bake at 425 degrees for 15-20 minutes, or until golden brown depending on oven and dough
  • Remove from oven and immediately sprinkle cheese over extremely hot pizza (if cheese doesn’t melt to your liking you can pop in back in the oven for just a minute or two)
  • Season with dried rosemary and enjoy!
